Out with a Bang!

Happy 2013 everybody!  For some reason I am really excited for the new year.  I just feel like "big stuff" is going to happen.  Already I have a nanny job lined up, which will bring in some extra income for me and I'm hoping that I will find a "real job."

I am grateful I've had these past months free to reflect on myself and where I want to take my life.  I have been giving a lot of thought to what I want to do with myself, career-wise, and think my true calling lies with holistic nutrition.  I am so, so, so very passionate about healthy living and I am constantly seeking out more information to broaden my "health knowledge (not to sound douche-y!).  If I don't get into the JET program, I think I am going to do a lot of research (what I do best!!) and seek out a program that suits me and charge ahead full force!

Anyway, last night I caught the baking bug and knew that the only way to get rid of it was to bake!  I made this recipe I've been DYING to try from Ashley's Edible Perspectives blog, which I just love.  The recipe is for gluten free/vegan cinnamon quinoa oat flatbread.  It was beyond easy to make and it turned out WONDERFULLY.  I have, like, 20 recipes from her blog I am waiting to make...






Aside from the baking bug I also got bit with the cleaning bug (darn those bugs!!).  I started by cleaning out the *frightening* tupperware cupboard, and that quickly turned into cleaning/organizing basically the entire kitchen.  It does look much better now.

Just to put things in perspective, this is an improvement.

The organization is not solely limited to the containers but to their contents...

For dinner my wonderful mom surprised me with sushi.  It was the perfect way to finish off the new year!





This week my goal is to tackle gluten-free/vegan Lofthouse-style chocolate-peppermint cookie.  I think I can do it.  Once I've made a batch that earn my seal of approval, I will post a recipe to my blog.

  1. Happy New Year Laura!! I love your optimistic words. I think 2013 will be a good year too! I just feel it! I wish you lots of happiness, success, good health and that you find the job of your dreams :)

    It's so funny because last night I said to myself that I'm going to spend the day today completely cleaning out my room. It's going to take more than one day because I want to get rid of the crap (old clothes, books I'll never use, etc.) and just clean the hell out of it. I am kind of excited about it! Your kitchen looks great and I love that you subtly showed off the Vitamix ;)

    OMG that recipe sounds delicious!!! I'm going to have to check out that blog for sure!! And how sweet that you and your mom brought in the new year with a lovely sushi dinner. My mom and I babysat my niece and had a total girl's night :) I much prefer quiet nights to craziness. My brother and sister in law went into NYC and I can't even fathom dealing with that.

    Anyway, happy new year! I'm so glad that you e-mailed me and brought me to your site! I value our interaction so much and you have been so incredibly sweet! :)

    I hope you have a productive cleaning day! I can't really ever "plan" cleaning days--they kind of just take me by surprise!

    I tried my first flatbread today. So. Good. You must make the recipe. It's super easy too! As for the sushi, yes, I LOVED it but my mom had some turkey meatballs and cornbread stuffing from Whole Foods' hot bar. I don't think I will ever get her to eat sushi, lol.

    Your evening sounds PERFECT. I am a homebody, like yourself, and would much rather have a quiet night in than have to stress over some huge New Year's Eve party. And if the niece you babysat was Delilah, then say no more!

    I am glad we've become "friends" too :)) Looking forward to continued correspondence into the new year :)
